The recipe is simple and straightforward  but the result is a rich and flavorful stew that’s perfect for chilly evenings or lazy weekends. 

Here’s what you’ll need:

Ingredients:

  • 2 pounds of beef stew meat, cut into 1-inch cubes
  • 1 large onion, chopped
  • 3 cloves of garlic, minced
  • 3 carrots, chopped
  • 2 stalks of celery, chopped
  • 1 can of Guinness stout
  • 3 cups of beef broth
  • 2 tablespoons of tomato paste
  • 2 tablespoons of flour
  • 1 tablespoon of Worcestershire sauce
  • 1 tablespoon of fresh thyme leaves
  • 2 bay leaves
  • Salt and pepper, to taste
  • 2 tablespoons of vegetable oil

Instructions:

  1. Heat the oil in a large pot over medium-high heat. Add the beef and cook until browned on all sides, about 5 minutes. Remove the beef from the pot and set it aside.
  2. Add the onion, garlic, carrots and celery to the pot and cook until the vegetables are tender, about 10 minutes.
  3. Add the flour and tomato paste to the pot and stir until the vegetables are coated.
  4. Add the beef back to the pot, along with the Guinness, beef broth, Worcestershire sauce, thyme, and bay leaves. Stir everything together and bring the stew to a boil.
  5. Reduce the heat to low, cover the pot and let the stew simmer for about 2 hours or until the beef is tender and the gravy is thick and flavorful.
  6. Season the stew with salt and pepper to taste and serve hot with crusty bread or mashed potatoes.
